I’ve come to terms that my original PR goal for the Big Cottonwood Marathon in Utah won’t be happening. Is this training plan anything like my previous one…NO! Am I 100% I can do this plan with the ankle…NO! Am I going to try…YES! I’m going to run easy and what I can for a couple weeks building my miles back up so I can finish this race. With coaching high school cross country (assistant) and team dinners each week, I will only be planning to run four days. This will also give me more rest days to rest, ice, and monitor the ankle. You’ll notice biking made it on the schedule. I plan to bike one day per week or in place of runs if needed. Some days will go as planned. Others will be a wreck I’m sure!

Ryan and I are reinstating date night as of this week. We are making this little project to help us stay committed to the idea during the crazy work weeks. Make one with your spouse or significant other. Keep things fun and interesting because no matter what life throws at you, they are your other half.

I signed up to run this marathon for my Kansas race because of the time of year (after cross country is done and fall) and the cool race medal! I’m a sucker for holiday related race events.

That is pure elation all over my face at the fact that I was running again (literally in this photo). I was really running for the first time in four weeks. The location might have had something to do with it, too.

I cannot believe July has come and past!
{#1-Garlic Lemon Herb Chicken}

With the cooler temperatures this week I used the oven to make this AMAZING chicken. It was so simple, juicy, and delish! If you don’t want to turn the oven on, then you’ll have to save this for fall. It would be worth the wait! On Ryan’s official rating scale (5-I would eat it once a week to 1- I’d eat it if I had to) he gave it a 5!

Another good recipe I’d normally reserve for fall, however this was just was too easy and went with the taco chicken we grilled. Add as much cheese and green onion as your taste buds like. I also added green chilies for more spice. For the link to the recipe click here.

{#3-No treadmills… Well maybe}

The day after I posted this photo to Instagram I was running on a treadmill. Wait, did you catch that? I was RUNNING! Thursday at physical therapy I got to slow jog 3 minutes and run easy pace for 3 minutes. That is six minutes of running. Tomorrow is the three week mark on my ankle sprain. This is all positive. I was told no biking or running today and take it easy this weekend (while doing my ankle exercises 3X daily of course.) I will be able to try a mile or two on Tuesday before going to therapy! So exciting!

Sunday I rode my bike for the first time in 10 years. I have to say I really liked it. Heck, after weeks without running…I loved it! 52 miles of biking this week later and I’m planning my next long bike ride for Monday!

This year it was super simple, oh so yummy, and a bit healthier than cake. Guess what, we liked it way better than cake! Make brownies in a pizza pan however you normally do and let cool. Mix cream cheese and vanilla with mixer and layer over brownies. Top with lots of fruit and enjoy!

So crazy to think Marshall Ulrich ran across the United States at the age of 57 in a matter of 2 months. It just goes to show anything we put our mind to is possible!

These workouts are tough for me, but what I absolutely love is that they encourage you to do what you can, give suggestions to make the workouts easier or harder whatever your fitness level might be, and just be active. They recognize that most the battle of exercise is mental and keep pushing you. After 12 minutes or so of body rockin’ I was drenched in sweat and felt like I couldn’t do another push-up, sit-up, shoulder press…and on and on. I am sore and owe my first endorphins in days (14 to be exact) to the people behind Daily Hiit. Thank you!

{#1-Running On Empty by Marshall Ulrich}

I mentioned this book earlier this spring. To be honest, I’m only half way through it. I really enjoy reading it, but I just don’t have a lot of free time where I choose reading first. With no running this week I’ve had more time on my hands to do some reading. I took a photo of the above text from his book because it is the FIRST time I’ve ever heard someone describe their experiences running long distance in the way that he has. I too have an imagination when I run and think about what the world was like, would be like, and other thoughts of the like. My imagination goes wild at times! These are usually my favorite runs when this happens. Does this happen to anyone else?

Since I’m not exercising like normal, I’m not burning the normal calories I would be. The simple math of the matter is there is less room for treats like my favorite buds Ben & Jerry unless I want to end up like on of their flavors-Chunky Monkey. 😉 I’ve always felt running is one of my loves for many reasons. While the number one reason I run is because of the way it makes me feel mentally and physically, my love of desserts is on the list, too.

I’m off to Jam today to see some of these awesome people with some awesome people! I’m pretty sure a sprained ankle is the best excuse to look for buy a pair of cowboy boots to wear to the country event. I mean I could wear my brace underneath it while at Jam. Ry did not love this idea! We will see!

I just finished making our vacation video that contains 700+ photos from our two week road trip. I saw this one and remembered I forgot to share. On Bourbon street there is an “establishment” called Stilettos; I had to take a picture under the sign since it’s half my blog title. Maybe the flats in the photo were a sign I wouldn’t be wearing stilettos any time soon.

{#1-Beach to Bay Relay-Corpus Christi}
Ryan and I ran along Ocean Drive for several of our vacation runs. It is a scenic place to run and covers part of the Beach to Bay relay course-the biggest relay in the US. I just learned about this relay from my dad and stepmom (who hands out water at one of the water stops). The relay is held annually in May on Armed Forces weekend to honor those who serve. This May will be the 39th running of the relay with 16,000 runners making up 2,600 teams. Teams run from, you guessed it, the beach to the bay! It sound like crazy fun to me! {#2-Running New Orleans}
While Ryan and I were stumbling walking out of the bars on Bourbon street we saw this lady. I suppose this would be a scenic route to run, but I’d recommend hitting the trails that line the Mississippi and Jackson square for a more relaxing environment without the crazies and the occasional smell of urine.

{#3-Moving in Memphis}
This time I’m not talking about running. We skipped running in Memphis, gasp, for a good reason. We were limited on time and I really wanted to visit the National Civil Rights Museum. We were so glad we did! It was way more than I expected. The museum takes you through a short timeline of civil rights before leading you through an in depth timeline of Martin Luther King Jr.’s events in the months, days, and minutes leading up to his death parallel to James Earl Ray and the federal government.

The museum is housed in the very building from which Ray shot Dr. King. You stand in the spot where Ray stood when he fired the fatal shot. Next you walk through an in depth timeline of the 65 day search for who killed Dr. King and see actual evidence collected during the investigation. Then you read through information from three later investigations brought by King’s family and others into whether Ray really was the guilty person. A walk through the last 45 years in civil right progress leads you to the outside of the Loretta Motel where King was shot outside room 608. You walk on the balcony, see Dr. King’s room as it was that day, and stand in the very spot where his life was taken! I usually get into history, but this was so much more. I was overtook by emotion standing in the VERY spot this amazing leader stood when he was fatally shot.

The experience was way more important than a run that morning. The only message more powerful than the history itself was the importance the museum put on educating young people of the cultures and people in the world around them. Yeah, for this museum. If you are ever in Memphis plan to visit for 3-4 hours!

Thursday we started our last day on vacation with a run around the arch. The shade and scenery were great. The stair workout was a plus!

{#5-Dances With Dirt}
On Saturday Ryan and I are off to run our first true trail race-the Dances with Dirt Half Marathon. No bike paths, not a couple miles off the beaten path; we are talking all off road and hills. The drop in temperature from vacation should make this a race way more tolerable than any runs we’ve had recently. So looking forward to not being drenched with sweat until a few miles in. Since we are still on vacation and I’m getting to enjoy running in new places, this week’s fab 5 are all photos from runs this week!

{#1-Brazo Bend State Park}
Really we hiked here, but we could have ran. Instead we enjoyed the mostly shaded trails with my sister. The best parts: seeing armadillos, alligators, and the sunset!

#2-Cullen Park}
If you live in the Houston area, then this park is a hidden gem! It connects to the nearby H Trail and is 5 miles (or 10 out and back) of nearly completely shaded trails (the earlier in the day the better). I was not expecting to find this kind of shade in Texas. Best Parts: The shade, and bathrooms and water fountains every couple of miles.

{#3-Mustang Island State Park}
There is only a mile of paved path, but when you are at this beautiful beach you really should be running in the sand. We went barefoot for the last miles of our run and my feet loved the chance to be free from shoes. Best parts: You can’t beat an ocean breeze and the sound of waves hitting the shore on a morning run!

If you’ve been to Corpus Christi, then you’ve probably walked, biked, ran, or drove on Ocean Drive. There is a reason-it is beautiful. In the early morning hours you will also find quite a bit of shade! Best parts: running right by the water, palm trees everywhere, and the sunrises!

{#5-My Running Partner}
The best part of being on vacation is having someone to run with. This someone is not just anyone, but rather my favorite person to travel and run with-my husband. Before vacation our schedules meant very little time to run together. Since vacation started we’ve run together every day I’ve had a training run. Having someone to encourage and sweat out those hot miles is so helpful. The extra support is awesome; thanks Ryan!

I’m writing from the road (i.e. from my iphone in the middle of Iowa on Thursday), so this will be short and sweet!

{#1-Road Trip}
Ryan and I hit the road yesterday for a 14 day road trip to see family and have some fun as a duo, too! One of the best parts-new running route and places to share with you! I’ve got two high mileage weeks coming up, so lots of running in this trip!

{#2-Spanish Flatbread Pizza}
I made this on the grill and it was a healthy way to shake up boring old pizza. I never actually get bored by pizza but…Make homemade dough, put on grill until toasted. Toasted side up spread salsa like you would pizza sauce. I used organic black bean and corn salsa. Then add cheese and any veggies. We only had peppers left before our trip, so it was red, orange, and yellow peppers. Grill until cheese is melted. Yum!

I’m nearly 1/3 of the way to my running goal for the year-1500 miles. Too bad I didn’t track my runs February to May hardly ever. I’m back to it now though! What were your goals for the year? Now that we are nearly half way through, what progress have you made?

I’ve been looking for an easy to travel with electrolyte beverage to take on the road that tastes good and is low calories. I’ve always liked Ultima in the past, but powder seemed too messy. I’ve heard a lot about Nuun and bought the mixed fruit box (grape, tropical, strawberry lemonade, and fruit punch). I’ve only tried grape so far, but awesome. Tablets are great, flavor good!

Ryan and I love sampling local beer. I saw this brew a month ago and have been waiting for the perfect time to try them out. Tonight is my second night not working and at home in the past two weeks, so there was no time like tonight. We liked both Capital Brewery’s Lake House and Island Wheat. I added a flower from our backyard! Perfect.

The flavor of this pasta salad was awesome! It was so unique; the fresh garlic and basil along with pine nuts gave this pasta dish a flavor all its own. Ry and I decided we might add some chicken next time for some extra summtin’ summtin’…;)

So the picture above is how I spent more time than I care to admit (hours) planning my runs for while we are on vacation for two weeks. While for some this might be a waste of time, it is the best guarantee I have for completing some high mileage weeks in deathly hot conditions, and increases the chances of running in some awesome locations. Plus, I LOVE running in new places, exploring new trails, and seeing new things. I’m giddy just thinking about it. Knowing where I’m completing each run, what the terrain will be like, and how to get there takes all of the guess work out of running while on vacation. Definitely worth it if you want to get your runs in. Check the All Trails app out for your phone which will find your location and tell you about nearby trails. You can also use their website after becoming a member. It is my go to for finding trails at home and on vacation.

Summertime and warm weather mean popsicles. I mean who doesn’t like them; even the cast on Mad Men said so! I’d been looking for the perfect popsicles containers and I believe I’ve found them. I will be posting all about popsicles in a separate post because I try to keep Friday’s short. Today’s flavor, we will call Lime Berry, included blended strawberries, blackberries, raspberries, blueberries (3.5 cups), greek strawberry yogurt (1.5 cups), and fresh squeezed lime juice (from 1 lime). Cheaper than buying them in the store and way healthier, too.

With summer started I have a few extra hours each day now that I work shorter shifts at night rather than teaching and commuting all day. What does a girl do with her free time while her hubby is teaching summer school-so far more cooking, cleaning, running, and more cooking. With so much fresh produce we bought last Sunday I want none of it to go to waste.

{#1-Homeade Ceasar Dressing}
I made my own version following this recipe. Yes, I grilled the French bread and the lettuce. Ry thought I ruined the grill by putting lettuce on it. I told him the grill would be just fine. It was awesome because I left out the anchovies and we used grilled chicken for protein instead.

{#2-Pinto Bean Salsa}
I already blogged about this, but it really is so amazing it deserves a second mention. I used olive oil instead of veggie oil and used half the sugar in the recipe and it was still one of the best things I’ve ever eaten. Make some now! You will be so glad you did.

{#3-Summer Runnin’}
Summer runnin’ had me a blast. Summer runnin’ happened so fast…and now that song is in your head! Over the past week I ran 40 miles and have been embracing summer heat- a feat unheard of in my house before. I’ve been running late morning to noon when the sun is high in the sky. It has been rough at times, but I haven’t quit like summers past. Maybe it is because summer runnin’ had me a blast or the fact that I have an important race in September?

{#4-Honey Lime Fruit Salad}
Of course more food! Now don’t get me wrong fruit salad rocks all on its own, but if you want to step it up and take it to the next level, then this is where it’s at. The added lime zest and honey (I used half the amount) really add something to regular fruit salad. I added blueberries because something just didn’t look right and a squeeze (okay like 4) of fresh lime juice. All I can say is awesome! It is what I thought about at the end of my hot runs!
